Mmmm Monday – Carrot Cake
A wonderful way to start your work week! Make some carrot cakes to take to the office! A fantastically tasty recipe by The Culinary Cafe.
Carrot Cake:
2 cups flour
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 tsp ground cinnamon
1 1/2 cup vegetable oil
2 cups sugar
4 eggs
2 cups grated carrots
1 8oz can crushed pineapple w/ juice
3/4 cups chopped walnuts (optional)
ICING:
1 8oz pkg cream cheese softened
1 cup butter softened
1 16oz powdered sugar
2 tsp vanilla
1/2 cup chopped walnuts
1 8oz can crushed pineapple drained
Sift all dry ingredients (first 5) together, set aside. Mix oil, sugar & eggs, beating after each egg. Add dry ingredients to mixture, mix well. Add carrots, pineapple (w/ juice) & nuts. Grease & flour 3-9″ cake pans or 1 9×13 cake pan or muffin tins lined with baking cups. Bake at 325ยบ for 40-45 min, muffins may take less time.
ICING: Beat all ingredients & spread over cooled cake.
